Nestled quietly in Yokohama’s Kannai district, this intimate restaurant is led by a chef who spent ten years training at the renowned Kushiyaki Daisuke, eventually taking charge of the grill. Here, he channels his refined technique and sensibility into a world of yakitori that is entirely his own.
At the heart of his cooking is the powerful heat of traditional Kishu Binchotan charcoal, paired with the Mushi Kamado—an ancient steaming method reimagined for the modern kitchen. By gently steaming and grilling the skewers while enveloping them in a subtle aroma of wood smoke, the chicken retains its natural moisture, resulting in a beautifully crisp exterior and an astonishingly juicy interior. Each skewer reveals a deep, layered richness of flavor.
The restaurant features a refined, minimalist space with just ten counter seats. In this quiet, uncluttered setting, guests can fully immerse themselves in the craftsmanship unfolding before them, engaging all five senses.
