We use salt, tare sauce, Japanese sake, or rendered chicken fat to enhance the flavor. For example, the tender chicken breast (sasami) is paired with a house-made pepper blend infused with heirloom Yamato tachibana citrus, native to Nara, adding a bright, refreshing note.
