The owner, wishing to “bring the taste of Edo-mae to Fukuoka,” trained in Tokyo and now carefully wraps locally sourced wheat flour and exceptionally fresh seafood from Kyushu—fresh enough to be enjoyed as sashimi—in a delicate, ultra-thin coating that locks in the natural umami of the ingredients. The tempura is cooked to perfection and deep-fried to perfection, and is a true work of art.
