About
Located near Tsushi Port on the western coast of Awaji Island, Kappo Hato is a long‑established restaurant that has been part of the region for more than 120 years, having opened in 1897 as a traditional ryokan. The kitchen is now led by the fifth‑generation owner, Tadashi Yoshida, who trained at Kawatomi, a respected Japanese restaurant in Minami, Osaka, and continues to carry forward the history and spirit of the family establishment.
The cuisine centers on seasonal ingredients from Awaji Island, blessed with rich natural abundance. With a discerning eye cultivated over many years, the chef selects each ingredient carefully and prepares Japanese dishes that bring out their inherent character. The first dashi is made from Rishiri kombu (kelp) and premium dried bonito from Ibusuki, combined with light soy sauce from Minami‑Awaji. Whenever possible, seasonings are sourced from the island itself. Among them, Jikoshizuku Shio—a salt crafted in nearby Goshikihama using an iron pot over a wood fire—is an essential element that enhances the flavors of the ingredients.
Antique and artisan‑made tableware adorn the dishes, while the interior features a single‑piece cypress counter and earthen walls made from Awaji Island soil. The space carries a dignified stillness, yet the gentle demeanor of the owner creates a warm and welcoming atmosphere. Guests can enjoy dishes that reflect the island’s charm through the seasons, accompanied by local Awaji sake, as well as seasonal sake and wine from across Japan.
