Daiku-machi Sushijin Hanare is a sushi restaurant housed in a private building and run by Izumi Kimura, an exceptional, self-taught sushi chef.

After a career as a businessperson, he opened his restaurant in 2000, driven by his passion for sushi.

The restaurant has been highly praised in numerous gourmet guides, including earning one Michelin star. Its greatest appeal lies in its unique style, born precisely from the absence of traditional apprenticeship.

The alternating presentation of appetizers and nigiri, along with inventive dishes that make full use of Toyama’s rich ingredients, continues to captivate guests.

Rice cooked in a traditional kamado pot and the restaurant’s own red vinegar create distinct flavors for each topping, offering a fresh surprise with every bite.

In a quiet space tucked away in Kanazawa’s downtown Katamachi district, sushi prepared under the guidance of a sommelier—paired with wine or champagne—creates a truly special evening.

This ever-evolving restaurant also offers a chance to experience Kimura’s philosophy as he works to preserve Toyama’s traditional trout sushi.

• Dietary restrictions / Allergies:

  If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. Unfortunately, we cannot accept reservations if there are ingredients that you cannot eat within a wide range.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal. If you do not contact us and exceed your reservation time, it will be automatically canceled.

  If you are late or you are leaving in the middle of your time, you may not be able to provide some of the course meals.

• Dress Code:

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)

• Children:

  Guests aged 15 and above are welcome.

  We offer only counter seating at our restaurant. For this reason, we kindly ask that guests be adults who are able to enjoy a full course meal.

  Please note that, for safety reasons, we do not allow guests to dine at the counter while holding a child. This policy is in place due to past incidents in which children were accidentally injured, and we appreciate your understanding as we prioritize the safety of all our guests.

  We apologize for any inconvenience and sincerely thank you for your cooperation.

  We kindly ask for your consideration regarding excessive perfume or fabric softener fragrances.

  When taking photos, please be considerate and avoid including other customers' faces in the photos.

  *A 15% listing fee is added to the price of the dining course.
