  • Sushi Ryusuke was fantastic. Every dish was impressive, and all the ingredients were prepared with the best quality and care. The rice was warmer than typical sushi rice, but it was very well seasoned with the vinegar, and it made the sushi more special. I would definitely visit again.

A long-established brand with 150 years of history, Ginza Yondaime Takahashiya prides itself on the most meticulous preparation among restaurants across Japan. It offers traditional Japanese kappo cuisine, a multi-course meal prepared entirely by the chef. The Ginza branch was opened with the aim of “revolutionizing” traditional eel restaurants by focusing utmost attention on the eels and the artistic interior, designed by a first-class architect and reminiscent of a museum.

High-class rice, water, and kelp are sourced from all over Japan. Eels, known for their numerous small bones that can detract from the dining experience, undergo a painstaking two-hour preparation process at Takahashiya to ensure a bone-free dish of the highest quality with meticulous attention to detail. Slowly charred over powerful binchotan (high-grade charcoal), the eels are tender and succulent, complemented by a savory sauce, resulting in an exquisite dish.

⑨Mochiku (茂竹)/天ぷら

With a history spanning over 100 years since its establishment in 1914, Mochiku offers tempura infused with a blend of old and new traditions. Their tempura is cooked in the highest-quality sesame oil, which is made using traditional techniques passed down over 150 years, resulting in a light, crisp finish. Guests can enjoy their tempura at cozy counter seats, some of which feature unique ingredients like kohada (a type of white fish) and seasonal vegetables.

In addition to tempura, Mochiku offers remarkable side dishes such as nukazuke (fermented vegetables in rice bran) made in the nuka-bed, which has been passed down for over 60 years. The fourth-generation owner, who apprenticed at traditional Japanese restaurants, expertly crafts side dishes to complement the meal. For dinner, guests can enjoy the omakase course, while lunch offers limited tendon (tempura on top of rice) and other dishes.
