About
At Ristorante Hanatani, each dish is built from a foundation of vegetables, pursuing the gentle flavors and unexpected harmonies that arise from thoughtful ingredient combinations. Owner‑chef Kazuhiro Hanatani has trained across multiple culinary genres, with Italian cuisine at the core of his experience. He treats salt, oil, and vinegar as ingredients in their own right, carefully considering their purpose and balance as he works with seasonal produce.
A centerpiece of the course is the handmade pasta crafted using techniques passed down in Bologna, Italy. The dough is kneaded for about an hour to incorporate air, then rested, rolled out with a rolling pin, dried according to the day’s temperature and humidity, and cut by hand. This consistent, meticulous handwork results in pasta with a light, clean bite that allows its natural flavor to shine.
The cuisine is offered as a course, with the menu changing monthly. Attention is given not only to the character of each dish but also to the flow of the course as a whole. Portions and balance are carefully considered to leave guests with a gentle, lingering desire to savor just a little more.
The restaurant features counter seating facing an open kitchen, as well as table seating in a calm, relaxed atmosphere. Hanatani aims to create a dining experience where the cuisine does not dominate too strongly, allowing guests to enjoy meaningful conversation with loved ones alongside wine.
