Chef Shinya Fukumoto began his culinary journey at the age of 15 and moved to Europe in 1998. After eight years of training in Italy and Spain, he became head chef of the renowned Cà sento in Valencia at just 26 years old.

Drawing on these experiences, his current style is rooted in Spanish cuisine and guided by the belief that exceptional dishes begin with exceptional ingredients. By bringing out the true character of each element, he creates plates that are meticulously composed yet never overstated—delicate, precise, and refined down to the smallest detail.

For Chef Fukumoto, cuisine is never the work of one person alone. It is brought to completion through the collective efforts of the entire team, from producers to the kitchen staff, and even the tools and the space itself.

This philosophy permeates every aspect of the restaurant, from its atmosphere to its cuisine.

Inside, a softly curved R‑shaped ceiling unfolds over a serene space where contrasts—white and black, organic and inorganic, wood and stone—are quietly harmonized through the interplay of light and shadow. The result is an environment that is both modern and classically elegant, gently embracing each moment at the table.

To accompany the cuisine, the wine cellar holds approximately 100 carefully selected labels, with a focus on rare bottles sourced from around the world.
