The owner‑chef, who honed his craft in authentic Italian cuisine at Sabatini in Aoyama, established a farm‑to‑table style after connecting with local producers in Kamakura. He personally visits farms and fishing ports to select pesticide‑free vegetables and freshly caught fish, offering a course menu shaped by the day’s harvest.

With completely pesticide‑free vegetables from Watanabe Farm at its core, the restaurant highlights ingredients sourced primarily from Kanagawa Prefecture—such as seafood landed in Sagami Bay by Mr. Hasegawa, a respected fish specialist, and game hunted by Odawara’s local hunters. Drawing on the rich bounty of both sea and mountains, each dish is crafted with care, using diverse techniques to bring out the natural character of every ingredient.
