Experience a new style of ramen—“Gastronomy Ramen”—where Italian and French culinary techniques are elevated and reimagined.

The highlight of the bowl is its exquisite soup, jointly developed by Chef Takuya Isobe, formerly of a renowned Italian restaurant in Sapporo, and Chef Ishii of the Michelin one‑star restaurant Le Musée. Using classic French consommé techniques, Hokkaido chicken bones, pig’s feet, and aromatic vegetables are gently simmered, then clarified with minced chicken and egg whites to remove any impurities. The result is a crystal‑clear broth brimming with refined umami.

The noodles are custom “bran noodles,” created in collaboration with Sudo Seimen, a long‑established noodle maker in Asahikawa. They offer a robust wheat aroma and a naturally high fiber content. Adding a distinctive touch to the bowl is the innovative “air” foam, as light as air itself, which infuses the broth with the savory essence of kombu (kelp).
