The signature shari (sushi rice) is made with barrel‑aged red vinegar from Chiba. By adjusting the rice’s moisture level each day according to humidity and the seafood being served, the restaurant achieves a delicate, melt‑in‑the‑mouth texture with a lingering finish. The true essence of Sushi Sawamura lies in the seamless harmony between the neta (toppings) and the shari. To complement each dish, the restaurant also curates a thoughtful selection of sake and wine chosen for their affinity with sushi.

The interior is enveloped in the gentle fragrance of hinoki (Japanese cypress), offering a warm and tranquil atmosphere.
