About
The search for the roots of Tajima beef and a deeper understanding of modern wagyu culture ultimately led to Tajimaguro, a premium breed raised by Ueda Chikusan in Hyogo Prefecture’s Mikata District.
Tajimaguro is raised with meticulous attention to its feed and even the balance of microorganisms within the cattle’s digestive system, promoting health from the inside out. Its appeal lies in its refined yet deeply satisfying flavor, exceptionally pure fat, and lingering finish. The restaurant’s fresh Tajimaguro offal is sourced directly by the owner, who personally travels to Tajima to procure it.
The salt used to enhance the flavor of the meat is specially produced by Shiojiro in Kochi. Made solely through a slow sun‑drying process without heating the seawater, the salt was developed after the artisan personally tasted purebred Tajima beef and adjusted its mineral balance specifically to complement the meat.
Both the dipping sauce and marinade are made with soy sauce from Daitoku Shoyu in Tajima. Made with carefully selected domestic ingredients and free from artificial seasonings, preservatives, and colorings, the soy sauce is naturally brewed without heating the moromi mash. Instead, it is left to ferment naturally through the changing temperatures of the seasons.
The restaurant also incorporates natural vinegar from Nakano Su, crafted using a traditional brewing method that dates back to the Edo period. Through thoughtful attention to ingredients, seasonings, and the harmony between them, it offers “WAYAKINIKU” — a style of yakiniku that values both exceptional flavor and well‑being.
