About
Tabuchi Yakuzen Kenkyujo is located in a traditional Kyoto machiya townhouse. Chef Tabuchi, who is well-versed in medicinal cuisine, offers a "Seasonal Wellness Course" tailored to each guest's physical condition.
The course begins with Chōritsu‑cha, a traditional medicinal tea whose flavor profile is said to shift depending on each guest’s current condition. Based on how the tea is perceived, the chef prepares a customized Personal Tea designed to support individual balance and well‑being.
In the appetizers, the philosophy of yakuzen is expressed through the Five Flavors—sour, bitter, sweet, spicy, and salty—each represented as a dish.
After the course meal, guests can also enjoy a variety of à la carte dishes. Choose from five to six options, including traditional Italian pasta crafted by a chef with a background in Italian cuisine and medicinal keema curry, and savor as much as you like.
Through medicinal teas, dishes inspired by the Five Flavors, and a diverse array of à la carte offerings,
Tabuchi Yakuzen Kenkyushyo invites you to experience a unique expression of yakuzen cuisine found nowhere else.
