Tokyo Gyutan Guide: From Casual Chains to Premium Yakiniku

Jul 22, 2026

Where to eat gyutan (Japanese grilled beef tongue) in Tokyo — from Sendai-style thick-cut sets to premium Kuroge Wagyu grills, across nine specialists worth booking.

If you've only met beef tongue as taco filling or a slow-braised cut, Japan grills it into something else entirely. At dedicated specialists it's the main event — thick slices over charcoal, crisp at the edges and juicy in the middle, served as a set with barley rice and oxtail soup. At yakiniku restaurants it's the thin opener, eaten a slice at a time before the wagyu arrives. The nine Tokyo spots below run the full range, from specialist counters to premium grills.

Gyutan Specialists in Tokyo

1. Negishi

If you want to try Tokyo beef tongue without booking anything, Negishi is the easy answer. The chain runs more than 30 locations across the city, most with enough seats to walk in without a reservation. Its signature is the set that pairs grilled tongue with grated yam (tororo) and barley rice — a combination Negishi is credited with introducing. Whole tongues are butchered in-house, so you can order both cuts: the thick cut comes from the richest, softest part, with only nine slices to a tongue. A trained in-house griller finishes each piece crisp outside and juicy within. It's the low-stakes introduction that still takes the meat seriously.

2. Rikyu

Rikyu built its name on doing everything by hand, and the tongue shows it. The Sendai-born chain keeps about ten branches around Tokyo, and it has refused to hand the knife work to machines since it opened. Skilled cutters read each day's tongue and carve out only the tender sections, then age the slices to deepen their flavor. The seasoning is a closely guarded salt blend, tuned to the season and even the time it took the meat to reach the shop. Charcoal grilling by trained staff gives it a fragrant, juicy finish. Most branches sit inside large shopping complexes with roomy counter and table seating, so getting a table rarely means a wait.

3. Gyutan Biyori Asakusabashi Branch

Gyutan Biyori exists for people who want to see how far beef tongue can go. The Asakusabashi restaurant serves it in forms most yakiniku places never attempt — rare-grilled, shabu-shabu, even a raw yukke. The house signature is a thick-cut rare tongue, slow-cooked at low temperature for twelve hours until it stays pink and yielding in the middle. The other draw is the raw shabu-shabu: paper-thin slices dipped for seconds in a flying-fish (ago) dashi, then eaten with slivered scallion and a house salt sauce. The room is polished, with counter seats, tables, and private rooms, and both English and photo menus are on hand. If you already know you like tongue, this is where you find out what else it can do.

4. Gyutan no Lemon

Gyutan no Lemon takes a firm position: beef tongue is best thick, and everything here follows from that. The specialist grills its tongue over charcoal across branches in Shinjuku, Asakusa, Yurakucho, and Shibuya. The headliner is the "kiwami" steak, cut as thick as a slab of beef from the prime tan-moto — the most prized part of the tongue, of which a single animal yields only about a kilo. Cooked piece by piece over charcoal, it comes out thick yet tender, and it has become a favorite with overseas visitors. Lines form at peak times, so it's worth reserving, and several branches keep an English menu or English-speaking staff. Come hungry and come early.

5. Gyutan Ara

Gyutan Ara serves tongue the way Sendai does — the city that made grilled beef tongue famous in the first place. That means thick slices eaten with a dab of spicy nanban miso, a shake of chili, and a side of pickles. The tongue is aged for depth and grilled over charcoal by hand, and it stays tender despite the thickness. Sets come with grated yam, oxtail soup, and free refills of barley rice, and there's a larger portion for bigger appetites. With locations in Shinjuku and at Haneda Airport, it's an easy last meal before a flight. Around fifty seats at each keeps the wait short.

6. Yakiniku Onuki

Yakiniku Onuki has landed on Japan's most-watched yakiniku top-100 list six times, and its thick-cut tongue is a big reason why. The kitchen doesn't chase a single prized region — it buys whatever Kuroge Wagyu is best on the day — and cuts the tongue to about 1.5 centimeters. A pro grills it for you tableside, so it arrives with a clean bite and a rush of juice. What lifts it is the sauce: a sweet marinade carried over from a long-established yakiniku house in Hamamatsu, with the recipe kept in-house. Four high-backed box seats keep neighboring tables out of sight, and there's an English menu and English-speaking staff. Book ahead — this is a course-based counter, not a walk-in.

7. Yakiniku Inoue Kagurazaka

Yakiniku Inoue serves two different cuts of tongue in a single course, which turns dinner into a side-by-side tasting. Each cut brings its own texture and aroma, so you taste how much the part of the tongue matters. The beef is Kuroge Wagyu sourced from across Japan rather than tied to one brand, and the tongue leans toward the easy-eating thin cut. Beyond tongue, the course moves through yukke, loin, and other cuts, so it isn't a one-note meal. The Kagurazaka dining room is calm, with tables of varying sizes and fully private rooms, plus an English menu. It suits a relaxed dinner where you actually want to compare what you're eating.

8. Yakiniku Horumon Inada

Yakiniku Horumon Inada is a Yazawa Meat operation, which means the tongue starts from wholesale-grade sourcing most restaurants can't match. The Meguro spot has made the national yakiniku top 100 six years running. It serves both cuts: a thick cut from an especially tender section with a clean, well-marbled bite, and a thin cut dressed in a house scallion sauce. It also runs preparations you rarely see, like a grilled-shabu of rare black tongue. The wood-lined room has tables and fully private rooms seating two to fourteen, alongside an English menu. For a group that wants pedigree beef without a stiff atmosphere, it's an easy call.

9. Yakiniku Shimizu

Yakiniku Shimizu cuts its beef tongue an extraordinary three centimeters thick, and there's nothing else quite like it in the city. The meat is female Kuroge Wagyu, prized for fine texture and clean, refined fat, and its tongue is scarce enough that only five or six slices come off a single animal. Rather than lean on heavy seasoning, the kitchen keeps it plain so the fat's sweetness and the meat's depth land directly. The result is a tongue that's tender and springy at once, with a bite you won't find in ordinary beef. What surprises most is the price — for a cut this rare, it stays genuinely reasonable. The room feels more neighborhood izakaya than special occasion, with 42 seats and an eight-year streak on the yakiniku top 100.
