The name Santekan brings together the three “te” words—kite (come), mite (see), and tabete (eat)—along with kan, meaning “to relax.”

The batter is made with a dashi base of bonito, kelp, and chicken bones, creating a fluffy texture and deep, savory flavor. The restaurant’s signature Suji‑yaki, featuring beef tendons simmered for eight hours, is its most popular dish.
