"Sushi Iwase" is located in a quiet area after the bustle of the office district of Shinjuku.

While many people aspire to become sushi chefs from an early age, the owner began his apprenticeship after the age of 20, drawn by a fateful encounter with sushi. He trained at a well-known restaurant in Tokyo and became independent in 2012.

The carefully selected ingredients are seasonal fish shipped directly from Kyushu, and the style of alternating nigiri and appetizers is designed to keep customers looking forward the next dish.
