Nishimura is a hidden sushi restaurant offering an omakase course that blends the traditions of Edo-style sushi with elements of Japanese cuisine. The chef trained at Sushi Sakai, a Michelin three-starred restaurant.

Originally from Fukuoka, the chef honed his skills at renowned Japanese restaurants, including Nadaman and an establishment in Kita-Shinchi, before spending five years at Sushi Sakai. After serving as the head chef of a sister restaurant of Sushi Sakai, he opened Nishimura in 2024. With the motto “Preparation begins with sourcing”, he personally visits markets daily and makes regular trips to Toyosu Market in Tokyo to ensure top-quality ingredients. He carefully selects premium seafood from Osaka, Tokyo, and Fukuoka, above all valuing trust and relationships with fishmongers. Guests can enjoy both expertly crafted sushi and innovative tsumami (side dishes) reflecting his experience and deep knowledge of Japanese cuisine.

The interior is a refined Japanese space, featuring a hand-carved nameplate by Sakurei Okamoto and a uniquely designed counter that provides a sense of unity across all seats. Private rooms are also available, offering an elegant and comfortable space for special occasions such as business meetings or celebrations. With exquisite sushi and a welcoming ambiance, Nishimura provides an unforgettable dining experience.
