KAKAN is a restaurant centered on Japanese ingredients, bringing out their full character with technical finesse. Drawing on Italian techniques while incorporating Japanese methods and food culture, KAKAN creates new and expressive dishes.

At the core of the cuisine is dashi—a carefully prepared broth extracted from a variety of ingredients. Combined with ingredients that reflect Japan’s climate and traditions, each dish is crafted to transcend conventional genre boundaries. The course menu is built around vegetables and features meticulously selected ingredients, including Iwate Prefecture’s Kuroge Wagyu “Kanzaki Beef,” chosen personally by the owner. The dishes are intentionally simple, highlighting the natural strength of the ingredients, and the menu is renewed every month. Wine and sake pairings that complement the cuisine are also part of the experience.

The interior harmoniously blends the cool, inorganic texture of stone with the warmth of wood, offering counter seating where guests can feel the immediacy of the cooking process, as well as private rooms for a more intimate dining experience. Every detail—from the tableware to the cutlery—has been thoughtfully selected.
