Under the supervision of Yuji Matsuo of the Michelin two‑star Sushi‑dokoro Tsukuta in Karatsu, the restaurant faithfully inherits his techniques and philosophy, offering Japanese cuisine and an omakase sushi experience centered on wild fish from Karatsu, complemented by carefully selected ingredients sourced from across Japan. The course begins with a progression of seasonal dishes before transitioning to nigiri, expressing the flavors of each season with thoughtful precision.

The seafood is sourced with exceptional care: wild fish hand‑treated one by one by Takuro Oyama of Oyama Sengyo‑ten in Karatsu, known as a master of the shinke‑jime technique; raw wild Pacific bluefin tuna expertly selected at Yamayuki in Toyosu and flown in daily; the bounty of Hokkaido delivered by Konishi Sengyo‑ten in Hakodate; and exceptional seafood from the Sea of Japan chosen by Ishiyo in Kanazawa. By visiting production regions in person and building trust with producers and brokers, the restaurant brings out flavors unique to each season and place. A curated selection of sake, Champagne, and wine—chosen by the sommelier and kikizakeshi, a certified sake specialist—enhances the harmony between the dishes and drinks.

The interior offers a serene atmosphere wrapped in the warmth of natural wood. A counter crafted from a single slab of ginkgo serves as the centerpiece, while tableware from Imari‑Nabeshima ware, Karatsu ware, and Hizen Yoshida kilns adds elegance and depth to the dining experience.
