Set within a traditional Kyoto townhouse with more than 126 years of history, it offers authentic poultry cuisine in an atmosphere steeped in the charm of the ancient capital. At Hachikian, the head chef personally selects premium chicken and duck, which are then aged using the restaurant’s unique techniques rather than cooked immediately. This process draws out their deepest flavors. The signature mizutaki hot pot features generously cut pieces of chicken, allowing diners to savor the burst of rich juices and springy texture with every bite.
