About
This restaurant brings together the experience and sensibilities of two chefs—one trained in French cuisine and the other in Japanese—working side by side in a single kitchen. Their dishes blend the strengths of both traditions: French cuisine enhanced with Japanese ingredients and techniques, and Japanese cuisine elevated with French methods. Offered entirely à la carte, the menu allows guests to enjoy whatever they wish to eat and drink, at any time, free from the constraints of a fixed course structure.
The kitchen is led by Wataru Nishimura and Takuma Hara, both from Aichi Prefecture. Mr. Nishimura began his career in Japanese cuisine, later managing overseas openings and serving as head chef at domestic locations for a food service company before moving to the United States. He went on to serve as head chef at Iroriya and Sumika in San Jose, and after returning to Japan, worked at CHIUnE before establishing his own path. Mr. Hara, who grew up helping his grandmother with her catering business, trained at La Grande Table de Kitamura and further refined his skills at Quintessence and CHIUnE before partnering with Mr. Nishimura. Drawing from their distinct culinary backgrounds, the two chefs bring their techniques and ideas together in every dish
The restaurant also highlights ingredients from their home region of Aichi. Among them, “Aichi Duck” is carefully cooked using French techniques to showcase its clean, refined fat and is finished in a light, elegant style characteristic of Japanese cuisine.
At the spacious counter kitchen, guests can enjoy the dynamic atmosphere of live cooking and converse with the chefs up close. In homage to their shared hometown, the restaurant uses Arimatsu Shibori cloth napkins. True to the idea of “connection” embodied in the name Restaurant I.To—a thread linking people, producers, and culinary traditions—the space remains relaxed and welcoming, where food naturally sparks conversation.
