Tamachi Sushi Evan operates under the concept of “bringing crafted ingredients from across Japan—together with the passion of their producers—to the world.”
Our nigiri sushi is crafted with meticulous attention to every detail, from the rice to the red vinegar. Each piece is a true expression of mastery, featuring rare ingredients sought after by top chefs, including seafood nerve‑killed underwater for exceptional freshness. Guests can enjoy genuinely direct‑sourced quality, with even the catching and handling methods precisely specified.
Our à la carte dishes, including the signature Grilled Hassun, reflect deep connections with farmers and regional traditions, expressing a worldview unique to Evan.
For alcoholic beverages, we prioritize rare labels that are seldom found in Tokyo, sourced through direct relationships with breweries. In addition to sake, we offer a wide selection of drinks—both alcoholic and non‑alcoholic—born from our ties with producers across Japan.
The restaurant features an intimate space with just ten counter seats, softly lit so that only the chef’s hands are illuminated. Here, you can savor approximately eight to ten crafted dishes delivered from producers nationwide, each presented with its own character and story—creating a truly special moment.
