KIEN is a meat kappo restaurant that brings out the fullest character of each ingredient through the interplay of fire and aroma. Owner‑chef Hayato Maruko carries forward the philosophy and techniques of the renowned Nishiazabu restaurant Nikukappo Jo, where he trained for more than seven years.
The name KIEN expresses the hope that people’s feelings are passed from hand to hand, eventually forming a single circle. From producers to chefs, and from chefs to guests, it represents our wish to create a place where every connection becomes part of a widening circle of joy.
The centerpiece of the course is carefully selected Sanda Seto Beef and seasonal vegetables sourced directly from dedicated producers. Each ingredient is cooked with precision, layering aroma, temperature, and texture to draw out its full expression. Every dish reflects the passion of the producers and allows guests to feel the subtle transitions of the seasons. A curated selection of beverages is also available, offering pairings that deepen the experience of each course.
In the refined counter space, guests can enjoy the entire process—from preparation to completion—engaging all five senses.
