About
Nestled quietly near Meguro Fudo-son Temple, the Japanese restaurant "AGUNÌTE" (Agunite) takes its name from the meaning "ubiquitous fire," and exists as a place that expresses the memory of fire and earth — the very origins of food.
Cherishing the relationship among people, nature, and historicity as described in Watsuji Tetsurō's concept of fūdo (climate/milieu), we pursue a distinctive expression of Japan — one that syncretizes the shifting seasons of Japan and the rhythms of human life with the food cultures of other lands.
The cuisine is helmed by a chef who served for many years as head chef at a Japanese restaurant in Nakameguro, before going on to earn a Michelin star as head chef of a restaurant in Paris.
Together with a sommelier and a tea master, he crafts each dish from the inseparable relationship between food, sake, and tea.
The space is centered on an open kitchen counter where the grain and texture of wood can be felt, complemented by tranquil private rooms — a setting that conveys a duality in which movement and stillness become one.
