About AGUNITE
Nestled quietly near Meguro Fudo-son Temple, the Japanese restaurant and bistro "AGUNITE" bears the name of the god who presides over the hearth fire, and exists as a place to express the memories of fire and land, the origins of food.
Neither kaiseki nor fusion cuisine, it is a reinterpretation that transcends the framework of Japanese food, honestly embracing ingredients and techniques nurtured by the local environment, while reconstructing them with a modern sensibility, elevating each dish into an epicurean experience.
The chef in charge of this cuisine served as head chef for many years at a Japanese restaurant in Nakameguro, and later earned a Michelin star as head chef at a restaurant in Paris. Having gained experience in various regions and connections with different places, he continues to express himself within the sensibilities of the city of Tokyo.
The space centers around an open kitchen counter with a tactile feel, and includes tranquil private rooms. Plaster and art are subtly placed, creating a setting where movement and stillness coexist with a sense of space.
