The Miracle of 37.5°C: Exceptionally Juicy, Premium Pink Tonkatsu

At Tonkatsu Akatsuki, we pursue the ultimate tenderness and juiciness, carefully locking in the natural umami and moisture of each ingredient.

The pork is carefully selected and sourced from a butcher shop at the Shibaura Meat Market, using premium brands such as Iwachu Pork, Hitachi no Kagayaki, and currently TOKYO X. Each cut is meticulously trimmed by hand to remove the sinews, then dehydrated and short-aged in-house under strict temperature control. By removing excess moisture, the pork's natural umami is concentrated to bring out a deeper, richer flavor.

Our unique frying method is designed to retain as much moisture as possible. The pork is slowly cooked at a low temperature, rested at room temperature, and then finished at a medium temperature to achieve a crisp coating. By maintaining a core temperature of approximately 65–70°C, the pork is finished with a beautiful pink center, resulting in exceptionally tender meat that releases its juices with every bite.

To preserve this exceptionally juicy texture, we are committed to serving our tonkatsu freshly fried and enjoyed in the restaurant.

Just as much care is given to the accompaniments that complement the pork. The rice is sourced from a local rice shop and milled only in the amount needed each day. It is freshly cooked in 3-cup batches using a Kyoto-made earthenware pot. We also serve our homemade kelp salt, prepared by simmering kelp from Rausu, Hokkaido, and combining it with Okinawan salt.
