About
Located in a residential neighborhood of Takaban, just a short walk from Gakugei‑daigaku Station, Coyo Heights occupies a room within the vintage Showa‑era apartment building of the same name. The chef, who honed his craft in Kagurazaka, creates original Japanese cuisine using seasonal ingredients, including seafood sourced from nearby waters.
Ingredients are carefully selected according to the changing seasons: wild mountain vegetables and shellfish in spring, sweetfish and conger eel in summer, matsutake mushrooms in autumn, and crab and oysters in winter. When exceptional ingredients cannot be found at the market, they are sourced directly from producers. Even seasonal ingredients are never used unless they meet the chef’s standards. Valuing the texture, umami, sweetness, and aroma of each ingredient, every dish is thoughtfully prepared through delicate craftsmanship and carefully made dashi.
The wine selection features natural wines from around the world, chosen by a sommelier. Guests can also enjoy small‑production wines made by producers who oversee every stage of the process, from cultivating the soil to growing the grapes. The sake selection reflects the changing seasons as well, featuring spring kasumi‑zake, summer nama‑zake, autumn hiyaoroshi, and freshly pressed winter sake, served in traditional vessels such as tin cups.
The interior, furnished with antique materials, offers a warm and nostalgic atmosphere. At the counter, guests can enjoy an intimate view of the chef’s craftsmanship and experience the anticipation as each dish is carefully prepared.
Savor seasonal Japanese cuisine shaped by meticulous technique and the finest ingredients of the moment.
