Shutei Tanaka is a Japanese restaurant led by the Tanaka brothers—Soichiro and Eiji—each of whom has mastered a different culinary path. The elder brother, Soichiro, refined his craft at renowned establishments such as Kyoaji, while Eiji honed his expertise at a specialty restaurant dedicated to chicken cuisine. After opening Gosso in 2013, the brothers relocated and rebranded as Tori Tanaka in 2017, before evolving into their current two-seating format as Shutei Tanaka in 2023.

Soichiro’s seasonal dishes express the beauty of Japan’s four seasons through delicate, precise craftsmanship. His philosophy centers on subtle, restrained seasoning that allows each ingredient’s natural character to shine. Eiji, on the other hand, creates deeply flavorful yakitori using premium Kumano jidori chicken sourced directly from producers.
