The menu reflects his devotion to Kyushu, Chef Kushima's hometown, showcasing premium meats and seasonal ingredients from the region. Traditional kappo techniques are elevated with creative touches, allowing the natural flavors of each ingredient to shine. Highlights include chargrilled Kagoshima beef ribeye, claypot Japanese mixed rice, and flavorful charcoal-grilled Miyazaki chicken—a nod to his roots.
