Our concept centers on the live experience—the excitement of watching a dish come together right before your eyes. Using fires built from charcoal, straw, dried branches, and fallen leaves, we draw out the full character of each ingredient through precise grilling and smoking techniques. Every dish, infused with aroma and depth, allows you to feel the shifting seasons.
The chef, born and raised in Tokyo, began pursuing the culinary path at the age of sixteen, refining his craft through training at culinary school, hotels, and osterias. With this foundation, he approaches each ingredient with sincerity, carefully crafting every dish with intention and respect for the season.
The star of the cuisine is fresh, seasonal fish. Centered around charcoal‑grilled fish cooked with exceptional precision, the menu showcases dishes that highlight the flavors of the season. Because the selection of fish changes throughout the year, each visit offers the pleasure of discovering something new. In addition, appetizers, risottos, and other dishes subtly infused with the aroma of charcoal or open fire bring out the individuality of each ingredient. A diverse wine selection is available to complement the cuisine, offering pairings that harmonize beautifully with the smoky, savory finish of the dishes.
