Located in Kitashinchi, Kitashinchi Sushi Matsui is a sushi restaurant where the head chef—who honed his skills at Ginza Kyubei—serves sushi that blends Edo‑style techniques with his own playful sensibility.

Seasonal fish sourced from across Japan is carefully prepared using methods such as aging, salt curing, vinegar curing, and kelp curing, as well as boiling, searing, and steaming—each technique chosen to bring out the ingredient’s best qualities. The rice for the shari is selected only after visiting the production region and inspecting it firsthand, then cooked in an earthenware pot and finished with red vinegar.

The menu consists of a single omakase course that interweaves nigiri with a variety of exquisite dishes. Guests can enjoy the chef’s craftsmanship up close, along with seasonal specialties such as abalone liver sauce and soft‑shelled turtle served in an earthenware pot.

The interior features a harmonious blend of warm wood and soft lighting, with eight counter seats and two fully private rooms for four guests each.
