“L’EAU” is a French restaurant whose name reflects its desire to stay close to people—like water. Chef Takamitsu Shimizu first studied graphic design before entering the culinary world, honing his skills at Mikasa Kaikan in Ginza and building a classical foundation at his father’s restaurant, “Restaurant C’est Bien.”

The course consists of around ten dishes. It begins with an amuse‑bouche titled “Water, Leaf, Soil, Stone,” then highlights seasonal ingredients such as nanohana, Spanish mackerel, and firefly squid, crafted with a range of techniques—grilling, steaming, smoking, and more—to create layered, multidimensional flavors.
