Chef Mawatari trained for four and a half years at the Michelin-starred La Ciau del Tornavento in Piedmont. Drawing inspiration from the comforting flavors of Italian mamma cuisine, he combines carefully selected seasonal ingredients from across Japan with premium products imported from Italy. Through this harmony, each dish is elevated into something uniquely expressive and deeply refined.
