Centering on her classic methods and signature dishes, the course is composed to highlight each ingredient at its peak. Seasonal Special Course

USD 260.83
This is La Shisen’s seasonal special course, showcasing seasonal and limited ingredients with Sichuan expressions unique to the moment.
The season of land and sea, of fragrance, and of temperature—as ingredients shift with the changing seasons, their character is shaped through Sichuan techniques, with the balance of aroma, spice, and umami thoughtfully adjusted in each dish.
Unlike the classic menu, this course features distinctive themes and playful touches. It may include seasonal specialties available only for a brief window, as well as experimental creations from the chef.
Celebrated by many as a course “that can only be tasted here and now,” it offers the joy of traveling through the seasons—one dish at a time—which is the true charm of this special menu.

Premium Dried Delicacies Course

USD 409.88
This is La Shisen’s premium course, reimagining the essence of Chinese dried delicacies through a Sichuan sensibility.
In Chinese cuisine, dried ingredients represent the pinnacle of luxury—items whose flavors are intensified through time, meticulous care, and uncompromising technique.
Shark fin, dried abalone, dried sea cucumber, dried scallops—each possesses a profound depth of umami that Chef Sun Li reinterprets with Sichuan techniques and aromatic expressions.
Soaking, gradual rehydration, precise heat application, and the layering of fragrance—because dried ingredients carry such natural intensity, every step of the preparation demands precision and refined skill.
In this course, you will experience a unique harmony created from concentrated umami × the depth of Sichuan spices × multidimensional aromas—a combination found nowhere else. Chef Sun Li’s approach highlights the inherent presence of each ingredient while delicately layering aroma, spice, and umami, guiding dried delicacies away from heaviness and into an elegant, lingering finish.
More than simply enjoying luxurious ingredients, this course offers an immersive experience of the time, craft, and cultural heritage embodied in dried delicacies.
