About
Japan’s “tea” and France’s “pastry”—çayca is a place where the aesthetics and techniques cultivated by these two traditions quietly come together. The name “çayca” is a coined word combining “ça” (茶, tea) and “ca” (菓, confectionery) with the French neutral pronoun “y.” Through a full-course experience of Japanese tea and plated desserts, çayca invites guests to discover the differences between the culinary cultures of Japan and France, as well as the harmony that emerges when they meet.
çayca was created by Kaoru Kurihara, who has served as chef pâtissier at some of Tokyo’s leading grandes maisons, as a place to express his own world of desserts. With French culinary techniques as its foundation, the course incorporates seasonal ingredients, Japan’s natural environment and culture, and the aesthetics of the Japanese tea ceremony to create a unique assiette dessert experience found only here.
Throughout the course, desserts reflecting the changing seasons are completed one by one before your eyes. Temperature, texture, aroma, acidity, and sweetness are carefully considered, and each plate is served at the precise moment when its flavors are at their best. The experience is not simply about tasting a finished dessert, but also about enjoying the very process and time in which it comes to life.
While each plate has its own distinct character, a single story flows through the entire course. From the tableware and presentation to the gestures performed before you, and even the pauses and moments of anticipation before each dish is served, every element contributes to bringing Kurihara’s world of desserts to life.
After all the desserts have been enjoyed, a bowl of matcha is served.
Guests may arrive at different times and enjoy their desserts at their own pace, but for the final matcha, everyone present shares the same moment and enjoys the tea together.
In the Japanese tea ceremony, there is a concept known as ichiza konryu—the idea that those gathered together connect with one another and create a shared space. çayca treasures this philosophy as well. After each guest has spent their own time experiencing the desserts, everyone comes together as one gathering to share a bowl of tea.
A bowl of matcha prepared by a tea ceremony practitioner, followed by small confections and the final tea. The individual flow of time experienced by each guest briefly converges before everyone returns to their own daily life. With the lingering impressions of the desserts, the course quietly draws to a close.
We invite you to experience the one-of-a-kind world that can only be found at çayca.
