Having devoted forty years to the craft of Edomae sushi, we are honored to celebrate our tenth anniversary.

We extend our deepest gratitude to all who have supported us along the way.

Our nitsume—a simmered sauce built from the layered flavors of conger eel, abalone, clam, and octopus—has quietly matured over the course of these ten years.

Anago (conger eel) glazed with this sauce, our signature hamaguri (clam) topped with a delicate jelly infused with yuzu, and domestically sourced wild bluefin tuna all reflect the essence of our craft.

The shari (sushi rice) is seasoned only with Yohei red vinegar and salt, allowing each piece to draw out the full character of the ingredients.

  If we are unable to reach you within 20 minutes of your reservation time, your reservation may be treated as a cancellation. Please be sure to contact us if you expect to be late.
