At the helm of the kitchen is Chef Yannick Lahopgnou, who grew up in France. Guided by his philosophy of “90% love and 10% technique,” his dishes are grounded in the mastery he cultivated at renowned establishments such as Paris’s legendary Le Meurice. He layers seasonal seafood and vegetables personally selected from Japanese markets with the fresh, bright acidity of herbs and fruits, creating plates that are delicate yet deeply comforting—nourishing both body and spirit.
Enhancing the allure of LOUISE is owner‑sommelier Miki Tanaka, recipient of the first‑ever Sommelier Award for the region in the MICHELIN Guide Kyoto Osaka 2026. Having experienced every stage of winemaking—from tending vineyards to fermentation—her guiding principle is simple: never impose a wine.
