Our specialty is “kohada” (gizzard shad), a quintessential element of Edomae sushi.

The shari (sushi rice) is made from new rice, known for its higher moisture content, carefully cooked with precise water adjustments to achieve the perfect consistency.

Our selection of sake, meticulously paired with the sushi, features a diverse array of types and origins, each with its own distinctive flavor profile.
