Located in Yoyogi-Uehara, Tokyo, “Shishie” expresses through sushi the rich natural environment of Joetsu in Niigata Prefecture and the food culture deeply rooted in this snowy region.

The sushi rice is made with rice grown in Joetsu, Niigata, one of Japan’s renowned rice-producing regions, with each piece crafted around the natural flavor of the rice. For tuna, the restaurant uses wild bluefin supplied by the wholesaler Fujita Suisan. Alongside seafood from the waters of Joetsu and seasonal ingredients sourced from across Japan, Joetsu soy sauce and salt, as well as ingredients rooted in the region’s traditions of fermentation and preservation, are incorporated to reflect the local terroir and the changing seasons through sushi.

To accompany the sushi, the restaurant offers a selection of sake primarily from Joetsu, as well as wines carefully chosen to complement the cuisine.

At the serene counter, enjoy Shishie’s distinctive sushi, shaped by the rice of Niigata and the culinary traditions of Joetsu.

• Arrival time:

  As the omakase course begins at the same time for all guests, please arrive on time for your reservation. The omakase course will begin promptly at 6:30 PM.

  If you are running late, please contact us by phone at (070-9095-0433) before your reservation time. If you arrive more than 15 minutes past your reserved time, your reservation will be automatically canceled.

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)

  Only those who can enjoy the same course as adults are allowed.

• Others:

  We kindly ask for your consideration regarding excessive perfume or fabric softener fragrances.

  As all guests are served simultaneously, smoking or leaving your seat during the meal may disturb others. We kindly ask that you refrain from doing so.

  Photography of the dishes is permitted. However, out of consideration for other guests and to ensure everyone can enjoy their meal comfortably, we ask that you refrain from taking videos.
