The owner first mastered the art of skewering at a Michelin‑starred yakitori restaurant before moving to the renowned French restaurant ESqUISSE in Ginza, where he oversaw viande (meat dishes). There, he deepened his expertise in heat control and cooking techniques, learning to draw out the full character of each ingredient. After opening the original Yakitori um in Kyobashi, Osaka, the restaurant quickly earned a reputation for serving the “ultimate yakitori,” captivating gourmets from across Japan. In September 2024, Yakitori um relocated to Shirokanedai, marking a new chapter in its evolution.

Premium ingredients—including the prized Amakusa Daio free‑range chicken—are grilled one skewer at a time over high‑quality binchotan charcoal, achieving a perfect contrast: crisp and aromatic on the outside, exceptionally juicy and tender within.
