Ao,” grill master Uchida carefully prepares premium jidori sourced from across Japan—including Kagoshima’s renowned Kuro Satsuma Chicken “Koku-Oh”—grilling each skewer over the finest Kishu Binchotan charcoal. With a deep commitment to traditional Binchotan grilling, every piece is cooked to perfection: crisp and fragrant on the outside, exceptionally juicy within, bringing out the full depth and natural sweetness of the chicken
Whole birds are sourced and then aged and prepared in-house according to the restaurant’s own philosophy, ensuring each cut is served in its ideal condition. For certain rare cuts, the chef may select the most suitable branded jidori from regions across Japan, allowing guests to experience the unique character of various local breeds throughout the course. One signature skewer, “Negimi,” pairs tender breast meat with flavorful skin and green onion, creating a rich harmony of umami and sweetness.
To finish, the oyakodon is made with a deeply flavorful broth simmered from jidori for hours and blended with a house-made soy sauce tare, offering a final dish filled with concentrated umami.
The restaurant provides an intimate atmosphere where guests can enjoy the sounds and aromas of the grill up close. Sourced from NS Farm in Kagoshima and expertly grilled over Kishu Binchotan charcoal, the menu features a luxurious full-course experience beginning with signature Kuro-Oh specialties. It is a lineup unlike any other, designed to highlight the chicken’s rich umami, natural sweetness, and distinctive aroma, complemented by the fragrance of the charcoal. Additional skewers are also available upon request.
