KAIKA offers cuisine that centers on Edomae‑style sushi while incorporating French techniques and sensibilities.
The head chef has refined his craft over 15 years at Yutaka in Kyoto, 10 years at Tofuya Ukai in Shiba, Tokyo, and 3 years at Sushi Isshin. Drawing on the skills cultivated throughout his career, he honors tradition while crafting sushi and dishes with a refined, contemporary sensibility.
The chef sources ingredients through his own unique procurement routes, including seasonal products shipped directly from Hokkaido. These ingredients are woven into both Edomae‑style sushi and a diverse range of dishes that reflect the season.
Another highlight is the restaurant’s extensive sake selection, featuring approximately 400 labels. Rare bottles such as Juyondai Ryusen Hayabusa, Aramasa No.6 A‑type, Denshu Premium, and Shinshu Kirei Ginkame 39 are among the offerings. Guests can enjoy their preferred sake paired thoughtfully with each dish.
