Kishu Binchotan charcoal is used throughout the cooking process. By adjusting the charcoal’s condition according to the day’s climate and humidity, the chef draws out the inherent flavors, aromas, and textures of each ingredient. Seasonal courses featuring delicacies such as pufferfish, crab, and matsutake mushrooms are also available, and special requests can be accommodated.

For the final course, guests are served Hinohikari rice from Nara Prefecture, carefully milled and cooked in a Shigaraki‑ware clay pot. This preparation highlights the rice’s natural sweetness and aroma. The restaurant also offers a selection of approximately 30 varieties of sake and wine to complement the dishes.
