For its yakitori, the restaurant uses female Kogen Hinai Jidori chickens that have been aged to the ideal degree, as well as guinea fowl from Ishiguro Farm in Iwate Prefecture—each offering its own distinctive depth of flavor. Skewers are grilled with care over the finest Binchotan charcoal, Hosomaru, and finished with delicately hand‑seasoned salt, allowing guests to fully appreciate the pure character of each ingredient.

The wine selection features approximately 300 bottles, centered on natural French wines. With a broad lineup spanning Burgundy, Bordeaux, and Southern France, the sommelier recommends thoughtful pairings that complement the nuances of the yakitori.
