Hidden quietly within the backstreets of Tsukiji, Rokkan is a refined restaurant specializing in suppon (soft‑shelled turtle cuisine). In an intimate, signboard‑less space reminiscent of a true hideaway, guests can enjoy delicate Japanese dishes inspired by the renowned restaurant Iyuki, alongside deeply nourishing and flavorful suppon preparations.
Chef Masahiro Ueda was born into a long‑established ryokan family in Kyoto and honed his craft at the prestigious restaurants Tankuma and Kyo‑aji before establishing Rokkan. Rooted in traditional Kyoto techniques, his cuisine focuses on drawing out the inherent flavor of each ingredient with exceptional clarity and finesse.
Only premium‑quality suppon sourced from the highly regarded Hattori Nakamura Turtle Farm is used. The omakase course showcases the full depth of suppon cuisine—featuring a richly concentrated broth in the signature hot pot, charcoal‑grilled preparations, spring rolls, chawanmushi, liver paste, and more. Refined Japanese culinary techniques are interwoven with the profound umami and restorative qualities unique to suppon, creating a dining experience found nowhere else.
The restaurant offers counter seating, where guests can observe the chef’s craftsmanship up close, as well as calm and elegant table seating. In this serene and polished atmosphere, guests can savor the deep, layered flavors of Japanese cuisine and suppon at a leisurely pace.
