Higashichaya Nakamura （東茶屋 なかむら）

He was born in Ishikawa Prefecture and trained in the Kansai region.

The light flavor with kombu dashi (kelp broth), made with many ingredients from the Hokuriku region, reflects chef Manabu Nakamura’s upbringing.

Abalones from Noto, oysters from Senrihama, and Kanokani crab from Kanaiwa are the seasonal delicacies.

The seafood from the Sea of Japan is combined with salt from Suzu, and the rice is local Koshihikari rice from Tsubata Town.

Wajima lacquerware, Kutani ware, and a Kanazawa atmosphere abound.

The name of the restaurant, “Higashi Chaya,” evokes a sense of nostalgia.

  If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. Unfortunately, we cannot accept reservations if there are ingredients that you cannot eat within a wide range.

  From November to February, Kanokani crab will be served at the restaurant. We are very sorry, but we ask those who are allergic to crab to refrain from making reservations. Please be sure to inform any accompanying guests.

  Please note that it is not possible to specify the type of seating (counter, private room, etc.) at the time of reservation.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal.

  If you do not contact us and exceed your reservation time, it will be automatically canceled.

  In the event of late arrival or early departure, please be aware that we may not be able to serve all parts of the course.

  We kindly ask you to allow ample time to arrive.

• Dress Code:

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)

• Children:

  Ages 15 and over. Those who can eat the adult course (Children are allowed in the private room only)

  We kindly ask for your consideration regarding excessive perfume or fabric softener fragrances.

  Please refrain from loud conversations in the restaurant. Please refrain from taking pictures in the store with the shutter sound or flash.
