This restaurant offers an exceptional experience of aged sushi crafted by chefs who have refined their skills at distinguished establishments, presented alongside a selection of seasonal dishes. Using carefully sourced ingredients and precise culinary techniques, each piece of sushi is elevated through aging methods that draw out depth, richness, and complexity. The course menu seamlessly interweaves seasonal cuisine with sushi, complemented by a curated selection of Japanese sake, allowing guests to savor the subtle transitions of the seasons in a luxurious dining setting.
The seafood is procured from premier regions across Japan, including fresh catches air-freighted from Fukuoka’s Yanagibashi Rengo Market, as well as Rishiri Island, Rebun Island, and Funka Bay in Hokkaido. Each fish is aged according to its unique characteristics, revealing layers of umami and aroma unattainable through freshness alone. For tuna, the restaurant selects wild Pacific bluefin tuna from Yamayuki, a renowned Toyosu wholesaler trusted by leading sushi restaurants nationwide. Otoro (fatty tuna), Chutoro (medium fatty tuna), and marinated Akami (lean tuna) each showcase distinct qualities, forming one of the highlights of the course.
The interior embraces a warm, traditional Japanese aesthetic centered around natural wood.
