Owner‑chef Shuji Niitome, a leading figure in the tempura world, coats carefully selected seasonal seafood and vegetables in his signature “living batter,” a technique perfected through years of dedicated exploration.

His approach to batter preparation is meticulous: flour is rested at –40 to –60°C and combined with eggs only moments before use. The frying oils—Taibaku and Taiko sesame oils—are blended ingredient by ingredient, with the temperature adjusted precisely to draw out the aroma, flavor, and moisture inherent in each component. The course menu reflects the shifting expressions of Japan’s seasons.

The interior is a refined Japanese space incorporating sukiya‑zukuri architecture and Edo‑period antiques, with thoughtful details extending from the bamboo‑lined entrance to every corner of the room. At the eight‑seat counter, crafted from a single chestnut wood plank, only a pane of glass separates guests from the frying pot.
