The Pinnacle of Tempura: A Culinary Performance at the Counter
At Tempura Kondo, our ultimate goal is to share the true essence of tempura with our guests. With over 50 years of craftsmanship, our chef adheres to the philosophy that "Tempura is a cuisine where the chef welcomes the guest," continuously honing his skills to new heights.
Kondo's tempura stands out for its exceptional lightness, achieved through a batter that resists absorbing excess oil. By moving away from the concept of thick coatings, we highlight the natural colors and aromas of the ingredients. Our signature sweet potato tempura exemplifies this philosophy.
We use the finest quality oil, remarkably fresh and refined, leaving no residue even on the restaurant walls.
Redefining Tempura with Vegetables
While traditional Edomae tempura primarily focused on seafood, we have revolutionized the genre by incorporating vegetables. Our vision is to elevate tempura to the level of globally celebrated culinary arts, akin to Japanese or French cuisine. Just as regional cuisines worldwide highlight local vegetables, we believe integrating vegetables into tempura enhances its artistry and creates engaging, well-balanced courses.
Every vegetable is personally tasted at its source before we commit to partnerships with suppliers. This meticulous process reflects our unwavering commitment to presenting only "the best, the genuine article."
