Nestled in Miyagawa-cho, one of Kyoto’s five historic hanamachi (geisha districts), Miyagawacho Suilen offers a refined dining experience featuring seasonal Kyoto ingredients artfully prepared in a multi-course menu. Whether enjoying a lively interaction with chefs at the counter or dining in an elegantly designed private room, the restaurant caters to a range of occasions, from casual meals to business meetings.
Executive Chef Munehiro Shimatani, who was born in Nara Prefecture in 1972, brings decades of expertise to Miyagawacho Suilen. After training under Yoshio Kurosaki at Kyoto Shinto Hotel Matsuhama, Chef Shimatani honed his craft at renowned establishments like Arashiyama Benkei and Kibune Hiroya. His accolades include winning the Kinki, Chugoku, and Shikoku regional competition at the 2nd Japanese Cuisine Competition in 2009. Notably, he introduced Japanese cuisine to the world at the 2016 Rio de Janeiro Olympics Japan Pavilion, and represented the art of Japanese cooking at the Davos World Economic Forum in 2017, 2023, and 2024. In addition, he produced a Japanese restaurant in Las Vegas in 2019. Chef Shimatani, the first head chef of Miyagawa-cho Suilen since 2012, now serves as its executive chef, continuing to innovate and elevate his craft. His notable publications include "Saishin no Mukimono no waza (Latest Carving Techniques for Vegetables)" and "Handbook on Japanese Food: Carving Techniques for Seasonal Vegetables (Japanese-English Bilingual Books)."
Recognizing the uniqueness of individual tastes and also the seasonal nature of ingredients, Miyagawacho Suilen forgoes specific signature dishes. Instead, the chefs create a fresh menu every month, tailoring each meal to the time of year and the guests they serve. Our chefs continually refine their skills and carefully select the finest ingredients, all in pursuit of providing the ultimate hospitality experience.
From the initial choice of ingredients to the final plating, every step of the culinary process harmonizes to transform cuisine into an art form. Like the gentle flow of water, each dish reflects the changing seasons, offering an experience that resonates deeply with both the palate and the heart.
